"Feast of Love" this Valentine at SEDA Atria

This Valentine, it's a Feast of Love at SEDA Atria Iloilo as the Ayala hotel chain features not one but two grand gastronomic celebrations on Hearts Day!

Celebrate Love with a grand and flavorful feast at SEDA Atria on February 14 with a 4-course set-dinner at The Velvet Room or with a festive dinner buffet to share with the family and loved ones at Misto Restaurant.

SEDA Atria gave a media and bloggers preview of its 4-course set dinner menu  and here's what you will be indulging in on the 14th.

For starters, you will have SMOKED SALMON TART with creme fraiche, chives oil and mixed salad. The thinly-sliced salmon almost melts in your mouth and complements the tarts crusty texture. The creme fraiche tickles your palate with  tangy sensation making this appetizer a perfect start for a gastronomically romantic dinner.

It served with focaccia bread with olive oil-balsamic vinegar dip. But on its own the bread is already a taste buds pleaser aside from having a nice and appetizing aroma.

Next on the menu is the OVER ROASTED TOMATO SOUP with apple and bacon tidbits. Leaning more on the Italian recipe, the tomato soup is light on the tummy despite its savory flavor. It is given a mild Asian twist with the addition of dried nori, an edible seaweed which is  staple in Japanese cuisine.

A PINEAPPLE-MINT SORBET will be served as palate cleanser or intermezzo just before the main course. It was a refreshing break from the indulgence - light, sweet and tangy; just perfect to cleanse the taste buds and have it ready for the main gastronomic event.

For the main course, diners have three choices - BEEF, CHICKEN or SALMON. And I can't get enough of the latter that I without having second thoughts, I opted for the PAN-SEARED NORWEGIAN SALMON. It was served with tomato and mango salsa, a melange of vegetables and pumpkin risotto.

As always, salmon had me at my first bite - a bit of crunch on the outside and tastily juicy on the inside. It was in perfect taste and texture symphony with the salsa and the risotto.

I also got to try the STUFFED CHICKEN BREAST VALENTINO which was rolled chicken stuffed with roasted bell-pepper plus mozzarella cheese and served with vegetables and balsamic glaze.

You can also choose the BRAISED AUSTRALIAN BEEF TENDERLOIN served with mashed potatoes with peas, a mix of vegetables and mushrooms in red wine.

Finally end the night with a SWEET TEMPTATION - Duo Chocolate Mousse and Red Velvet Lava Cake. The former is a shot of white and dark choco mousse topped with Oreo creme while the latter is a Red Velvet cake oozing with red lava!

The Red Velvet Lava Cake had me at the first spoonful with a play of texture in every bite. And will be perfect gastronomic ender to this season of love with SEDA Atria's Feast of Love this Valentine's Day!

And did I mention that this comes with unlimited wine, rose for the lady and a romantic string serenade?

The 4-Course Valentine Dinner for SEDA Atria's Feast of Love at SEDA Atria takes place at The Velvet Room (7th floor)  while the Festive Dinner Buffet at Misto (Lobby floor) - both on February 14, 2018 from 6:00 PM – 10:00 PM.

Valenciana

Ilonggos really love valenciana because most if not all have grown accustomed of having it in almost all occasions like fiesta, brithdays, reunions and all other occasions thus I love calling it as the "occasional dish".   Basically, " go, grow and glow " dish, it has the carbohydrates, protein and vitamins and minerals in just one spoonful. And it can come in its simplest form with just malagkit rice, pork, chorizo and bell peppers to some fancy with additions like raisins, peas, chicken, hardboiled egg (just garnish though), etc.  Here's the recipe for Valenciana Ingredients 3 cups Glutinous Rice ( malagkit ) 2 cups Pork, sliced 1 cup Pork, Beef or Chicken  Liver, sliced 2-3 pieces Chinese sausage, sliced 2-3 large red bell peppers, sliced lengthwise 1 cup Green Peas 3 small boxes Raisins 2 pcs.Onion, chopped 4 cloves garlic, crushed salt and ground pepper to taste  2 pcs. pork/chicken bouillon/broth cube

Native Bibingka

There are two types of bingka I've grown up with. First is the flat and "coconutty" ( with lots of buko strips) bingka made famous by the bingkahans in the plazas of Iloilo City especially in Molo and Jaro plus Plaza Libertad. But the most famous is the one in Mohon, Arevalo which gave birth to the popular bingka sa Mohon. Flat bingka from Mohon And second is the one closer to home, in my hometown which before only appears during Semana Santa but now almost year round. This is what we refer to a puto-bingka as it looks and taste like toasted puto. Here's a sample recipe of this Puto-Bingka

Laswa

Mention laswa  and a merry mix of vegetables would come to mind. This is a perfect "realization" of the Filipino folk song "Bahay Kubo" which narrates an abundance of vegetables beside the traditional Filipino hut. Laswa has no definite list of ingredients nor way or cooking as it is just "stewing" available vegetables, not only from the garden, but what's inside your fridge or you bought from the market. It ranges from the simple all vegetable dish to ones having seafood like shrimps, crabs and more. But in the end it all boils ( pun intended ) down to what you prefer at the same time, what is available. Here's a simple recipe for Laswa
