Giniling na Baboy is both a dish and is actually the literal translation of ground pork. It's among the easiest recipes and one that can be tweaked to suit you own taste at the same time cooked with whatever ingredients are available.
While most often it is cooked with tomato sauce, it can be one with out it. Too add more kick to it, I often smother it bottled hot sauce. Namit gid!
Here's a simple recipe for Giniling na Baboy
- 3/4 kilo ground pork
- 1 big carrot, cubed
- 2 medium potatoes, cubed
- 1 small can peas
- 2 bell peppers, preferably green and red
- 4 cloves garlic, minced
- 1 small onion, minced
- salt
- pepper
- 1 cup tomato sauce (optional)
- oil
- water
- In a heated wok, cook ground pork in its own oil until brown. You can discard the liquid if you want after.
- Add a little oil then saute in garlic and onions.
- Season with salt and pepper.
- Add 1/2 cup of water, then add potatoes and carrots. Just adjust amount of water enough to simmer in the vegetables.
- After 10-15 minutes or until the vegetables are cooked, add peas and bell peppers. (Add tomato sauce here)
- Simmer for around 5 minutes. Make final taste adjustments with salt, pepper or even sugar.
- Remove from heat and serve with rice.
You can use almost any vegetable to make this. Patola is one and makes a good dish. Store bought mixed veggies pack like corn-carrots-peas makes a visually appetizing dish.
