One delicious afternoon at Park Inn by Radisson Iloilo

Park Inn by Radisson Iloilo recently opened it's swimming pool and gym &fitness center plus it's Pool Bar - all located on the 2nd level balcony of the hotel.   It was an afternoon not only filled with splashes and pool rendezvous but also one filled with  traditional summer comfort food the hotel can offers its guests.  The hotel's in-house restaurant ANI , served some of its delectable specialties complementing that one enjoyable afternoon spent in the cool waters at Park Inn by Radisson Iloilo.

Homemade Mango Float Ice Cream

While mangoes are plentiful and cheap this time of the year, I decided to make the most popular and overly hyped dessert - MANGO FLOAT. But while preparing, a sudden idea struck me as I came up with this weird upside side down mango float that eventually become an ice cream... sort of. Pinamalhan nga Bangrus

Bangus  or milkfish is one of the most abundant and versatile fishes around the country. It can be cooked in so many way - sinugba, pinirito, sinigang, paksiw and relyeno , among others. One of the easiest yet delectable ways is cooking it Ilonggo-style called pinamalhan . It rooted from the Hiligaynon word " mala" meaning dry. The fish is stewed until dry in a concoction of vinegar, soy sauce and spices. But most of the time, we tend to leave a better portion of the sauce as  sabaw  thus making the recipe an adobo-like paksiw rather than a paksiw-made-dry, to which  pinamalhan  got it's name.  Namit gid! Kansi

Kansi , they say, is the Ilonggo version of bulalo . As both specialties make use of beef shanks, it is often believed to be. But when you actually have tried kansi , you'll taste and see the difference.. Kansi is a cross between bulalo and sinigang as this Ilonggo specialty make use of batwan , a local souring fruit. So if you love bulalo and sinigang, chances are, you'll love kansi . Let's taste and see! Here's a simple Kansi recipe.
